Remarkable Restaurant Two years after the establishment's creation, Lucas Engel has given way to Anne-Cécile Scherrer and Léo Streckdenfinger. Under the watchful eye of Carole Eckert, these young duettists continue in the footsteps of their predecessor and interpret the same locavore gastronomy with strong links to producers. Never static, with a unique ten-course surprise menu, the cuisine responds to a theme that changes every two months. Apart from the main course, known as the "pièce maîtresse", the starters are all plant-based. One example is the "gourmandise" of potatoes with Mont d'Or, whose flavors are reminiscent of a raclette, reinterpreted here with a yellow wine caramel. We revisit traditional dishes, such as this Wellington where beef fillet is replaced by butternut squash and kale, and onto which we pour a snail butter whose garlic flavor is not without displeasure, even if it has a tendency to "crush" that of the vegetables. The duo of scallops and sweetbreads follows, with everything perfectly staged, such as the salt crust containing hay. A veritable festival, each dish is multiplied into several satellite dishes and several courses. This being Alsace, sweet tooths won't be disappointed by the desserts: the Mont Blanc is revisited with candied pumpkin, clementine and yoghurt mousse. As for the pear, in pickles and syrup, it is combined with a soft truffle ice cream, a few caramelized hazelnuts and a praline cream. For the final touch, Jean-Noël cuts the log on the pedestal table, replacing the cocoa with roasted lime blossom. For the scenography, everyone is seated in front of the kitchens, where the chefs play their roles as if in a gourmet theater. With Carole's advice, the vinothèque is well stocked with organic and natural wines, including grands crus and vins de terroir. Every meal is a feast: local artisans have been called in, and every detail has been thought through, with a multi-sensory approach. Hosted by Carole Eckert, the friendly front-of-house team is always ready to listen, helping to create a cool, warm atmosphere. Now a must-visit, this former carpentry workshop is undoubtedly the embodiment of Alsace on the move.
