Finally! Carole! In her forest hideaway high above the city, Carole Eckert is completely in her element, her universe, at home. With Charlotte on the savoury side, Jean-Noël on the sweet side, Margaux her accomplice in the dining room and a young, dedicated team, she's got the project well and truly in hand: we use products of the moment, without any imports, except for the chocolate with the coffee, we don't throw anything away, we aim to please! And she herself is the "creator", providing the ideas and working with her team to find the best way to put them into practice. And it works quite well, with powerful appetizers (local chickpea flour panisse, tomato and cherry tomato water, Rhine crayfish with scallop coral chips and tangelolo), heralding a sequence full of inventiveness and freshness: cucumber in its natural form, escabeche, pickles, granita, green onion oil, ajo blanco in soup and ice cream, beautifully flavored and textured with crunchy vegetables, a very creative adaptation of bouillabaisse in Alsace, bouchée de perche, quenelle de brochet rouille au siphon minestrone de légumes et soupe d'écrevisses zucchini poutargue de pérre.. Sparsbach trout, cooked for 3'30s at 70°, crisp vegetable beans, sage leaf and emulsion, shows a little less character, but can be swapped with summer venison with blackcurrants from the garden, before Jean-Noël's beautiful desserts, olive oil almond red fruit, or the gourmet apricot tatin from a prodigal cart. Naturally, every detail is carefully considered (bread from the Kikiriki farm, knives from Quentin Mourier...), right down to the beautiful cellar, committed and responsible, also the fruit of Carole's research and tastings, favoring the natural, but in a straightforward way, helping small estates with confidential vintages.
