Remarkable Restaurant An aptly named address, despite its suburban location, that insists on the free-spirited tone of a singular table, cultivating a wild, independent spirit, where chef Sylvain Joffre explores his terroir according to his whims and inspirations. The hidden menu is the norm here, leaving the chef free to explore all the possibilities, delivering a new perspective on the local product with each plate, with remarkable work on seasonings. The chef's work as a picker, forager and cook, right down to the bread (a marvel), also crystallizes the balance between craftsmanship and inspiration, from €47 at lunch to €98 in the evening. Beautiful south-facing cellar.
