Remarkable Restaurant For the past fifteen years, this has been Montiliens' favourite restaurant, just a quarter of an hour from the town center. Chefs have come and gone, but the quality remains, as does the atmosphere, that of a large, relaxed house where you can already feel Provence coming into view. Johan Thyriot took over the reins superbly last year, asserting all his talent and know-how in a cuisine he has mastered so well since his Tarasconnais experience. He uses the finest produce with precision and imagination, focusing his work on healthy, sustainable research through the permaculture vegetable garden in Bourg Saint-Andéol, honey, herbs and locally-produced olive oil. The menu is an excellent catalog from which to choose and adapt to different menu proposals. Discover, for example, ceps and mushroom praline, scallops and Burgundy truffle, three-course red tuna, fillet of beef and rutabaga, squash-crusted partridge. The chef, a great lover of pepper, varies the seasoning, spicing up each dish according to his taste, and pastry chef Maxime Binjamin (who left the establishment at the beginning of 2024, replaced by his second-in-command) takes over in the same spirit with his parsnip licorice mint cubeb pepper coupling or the pear cider buckwheat marsh berry... Remarkable cellar for the whole valley, well presented and lively.
