Chef's Restaurant A new chapter opens for Domaine de Verchant, with a new ambition for the Marcelle restaurant, entrusted to young chef Alexandre Caillaud, under the supervision of Nicolas Sale. In this beautiful setting, ideal for seminars and business lunches (we enjoyed a magnificent Gault&Millau Tour here), we've gone into boost mode, both in terms of the welcome, which is increasingly professional and chic, and in terms of the dishes, which are now approaching 3 toques: beautiful appetizers, including the chickpea tartlet from Béziers, a splendid composition of asparagus from Le Crès, fresh goat's cheese and sorrel granita, as well as mussels from Thau, royal fondant, broad beans and wild garlic, marinière juice, and, more classic and gourmet, the pig from Aveyron, roasted rib, foot in cromesquis, confit cheek and Béarnaise condiment, smoked celery, black garlic juice. This is followed by a superb strawberry dessert, simple to the eye yet very well crafted and excellent with strawberries, homemade yogurt, arugula and candied black olives. Extensive wine list, both regional and international, with a good selection by the glass.
