His universe revolves around the Mediterranean, with dishes such as hake, chard, burnt lemon, condiment juice, scorpion fish, fennel, rock soup, or artichoke from Provence, nasturtium, kumquat, head exudate.. You'll also enjoy the work of pastry chef Héléna Philippart, whose dessert of kiwi, tagetes and fromage blanc will leave you breathless. A plethoric wine cellar, very strong in the region, but wines by the glass are only suggested in pairings.
