Remarkable Restaurant Philippe Girardon, MOF 1997, is a benchmark for many chefs in the region, a role model for leading, managing and growing a business. His estate, a quarter-hour's drive from Vienne, is a bourgeois haven of the finest taste, with his haute cuisine serving as a yardstick of good taste, and the numerous allusions to our pneumatic colleague are a good indication of which traditional chapels are adhered to here. Everyone is delighted, and the seasonal menu offers something for everyone, with crayfish, swimming and lacquered, claws on a bisque, crunchy fennel and tomato and tagette sorbet, char from the Fontaines de Beaufort confit au naturel and grilled, zucchini in two ways, sauce vierge and basil sabayon, herb quenelle and lemon confit in a bowl, lemongrass and ginger bone broth, a strawberry dessert with lemon thyme cream, crumble and fresh herb sorbet. Dominique Viala manages the extensive Rhône wine list with erudition, and the teams are well in place.
