Chef's Restaurant An address that's always a little complicated to assess, between the Parisian tics of service and sommellerie and the beautiful sensations of the kitchen, admittedly a little too bitter-sour, but always capable of surprising and seducing, with enticing amuse-bouches, very convincing tortellini cacio e pepe, infusion of red shiso, bottarga and rhubarb; cod, salsifi, beurre blanc with yellow wine and hazelnuts, well-balanced in texture and flavor; a much less successful beet duck; or the superb, joyful eel, lacquered with fromage blanc and bitter leaves with sesame and yuzu... The pace is very fast in the beginning, and softens considerably until the (good) chef's desserts (brioche perdue, pistachio, grapefruit and timut pepper ice cream) with gourmandise and kindness. A good selection of French and Italian wines in the cellar, including by the glass, at reasonable prices.
