Between Occitan tradition and more contemporary refinement, chef-owner Christophe Fasan offers a wide-ranging menu (which, unfortunately, varies too little), allowing everyone to find what they're looking for and to repeat the visit: classic "langoustine ravioli, shellfish cream" and "herb-crusted cod, tarragon beurre blanc", renowned "cassoulet au confit de canard de Francis" (one of the best in town), generous "ris de veau braisé au floc de Gascogne, macaroni with mushrooms", or "charlotte of pigeon, green cabbage and foie gras" (one of the year's rare and highly successful novelties), not forgetting the unmissable "hot soufflé with Grand Marnier" or "citrus pavlova".
