Gault&Millau's review 2025

A safe bet just outside Béziers, run by Eddy Blayac for the past two years. The place is sober and the cuisine colorful, with ideas based on the terroir that offer a new take on the classics, both in form and content. The rustic menu includes country terrine, squid stew, pork parmentier and blackberry panna cotta. Bistronomic menu at €34.
