Maxime Lesobre, Grand de Demain 2024, continues to run this essential restaurant in the north of the region, a large, beautiful mansion in the quiet Côte-d'Or countryside. His cuisine is that of a top-class hotel, with all the resources needed to showcase prestigious products: veuxhaulles trout gravlax with blood orange declension and pickled turnips, beef tongue in a spicy sauce cleverly paired with langoustine tartare and creamy bisque in a beautiful combination of textures, duckling from Dombes where Jerusalem artichoke blends with truffle, before an audacious caramelized glazed salsify and praline dessert from pastry chef Saé Hasegawa. A fine cellar of Burgundies and Champagnes.
