A family affair that began in 1946, the establishment is emblematic of the region, and an institutional address that deserves its reputation. After Paulette and Bruno, son Mathieu Chartron carries on the legacy with great humility, knowing how to magnify the classics that have made the house famous. The emphasis is on the great recipes, where the house knows how to do things best, such as foie gras and truffled scallops ravioli, vegetable broth emulsified with truffle butter, cappuccino of pigeon consommé and Jerusalem artichoke with black truffle, salt-crusted "black diamond", salsify gratin and truffle port sauce, or exotic fruit finger, pistachio shortbread and coconut sorbet. Excellent service.
