Chef's Restaurant Brice Moncuit, himself the son of a fisherman, has no need to compromise his carbon footprint when it comes to shopping. He buys as fresh and as close as possible, knows the right suppliers and knows how to spot a tired red mullet from over a hundred paces away. In his Carabot, where the atmosphere is often supercharged, our Gault&Millau award-winner serves the finest scallops or pigeons in winter, before switching to tapas mode (but always with his chef's touch, of course) when the fine weather arrives and the little square fills up with a crowd both happy and grateful to experience such great moments at such a good price.
