Gourmet Restaurant Hidden away in the Val d'Oise countryside, an immense 60-hectare listed park and its Château de la Bûcherie. Below, the Cambrousse restaurant, with its long vaulted dining room overlooking the open kitchen on one side and a large arched bay window overlooking the park on the other. The vegetable garden, the permaculture greenhouses, which can be visited, and the orchard, dictate the two four-course menus at €59 and seven-course menus at €79 offered by chef Valentin Bouilleveaux, in an assertive locavore approach: just-roasted leeks, crumble, goat's cheese, green and white asparagus, asparagus cream, oxalis and garden flowers, before pressed lamb confit, slivered almonds, diced candied fruit and a vintage dessert, tiramisu. Friendly staff and classic wine list.
