Chef's Restaurant Naturally, we were eager to meet up with Justine Viano and Stéphan Paroche in their new setting, following their departure from Assignan. Admittedly, the environment is less charming, in the middle of town, and the setting is less picturesque, but the couple have kept their fundamentals, notably their sourcing, which is as sharp and militant as ever. The first plates are also slightly below expectations, no doubt due to the need to set up and secure the house. The level remains very respectable and the performance promising: a good series of appetizers (including the famous vegetal taco from Assignan's time), Camargue mussels, red peppers and coriander cream make a fine starter, as does the roasted tomato, tomato water, verbena, tomato purée, tomato sorbet and umeboshi: red mullet is powerful, red mullet juice, onions, accompanied by a red mullet tartlet, fried scales, and red mullet liver: pork like ramen, gyoza, chanterelles, chard multiplies flavors, before the desserts, figs for one, watermelon melon for the other, still to be refined. The potential remains great, the rich cellar is served by a very good sommelier, and we look forward to following the evolution of this Chalice, which is just waiting to open up.
