Gault&Millau's review 2026

This large, contemporary building on the outskirts of the center of town looks great, and the dining room exudes a chic, hushed ambience. In a way, it's the ideal setting for Justine Viano and Stephan Paroche to produce the brilliant cuisine they've been known for since Castigno, their previous experience. Hidden menus for the most part, no à la carte menu, a good match with the seasonal market: loup de ligne juste nacré ajo blanco et sauce aguachile, gibier du moment en " retour de chasse " farce foie gras jus de baies de sureau, kiwi poché miel d'agrumes sorbet miel kiwi in the €85 lunch menu. Well-stocked regional wine cellar.
