Remarkable Restaurant On the Quai Saint-Antoine, in the heart of Lyon, Mathieu Girardon takes you by surprise. There's no need for frills, here it's the produce that does the talking. Two striking menus (€100 and €135) offer straightforward, no-nonsense cooking. The langoustines, snacked on a hot pebble, and the foie gras with corn, are masterpieces. The sea bream plays the sweet card with artichokes à la barigoule, but the real fireworks? Crayfish gratin, burnt bisque, cognac sorbet for acidity. A clash of textures, a real wink. Girardon doesn't stop there: the rabbit in saddle and raviole pushes the technique to the max. There's "dope" here on the plate! and not just roots, or cream siphons mounted to anything and everything. The chef is generous, and keen to share his favorites. The only drawback is the desserts, which could still do better. The wine list would make lovers of Bordeaux or Rhône Valley wines choke: here, 99% of the menu comes from the Burgundy region, hence the name.
