The €79 menu is exemplary, with duck foie gras in fig jelly, celery sweetness with vanilla, almonds and fresh figs, turbot steamed and stuffed with mousseline, eggplant and chanterelle pickles, beurre blanc with yuzu juice, rack of lamb roasted with rosemary, panisses with violet olives, tomatoes au gratin Provençal style and onion soubise, wild herb jus, and finally the chocolate passion, caramelized pecan feuilletine, passion fruit sorbet.
