Fifteen kilometers from Carcasonne, this is one of those fine transalpine restaurants we love to return to, for its contemporary charm, which combines old stone with a streamlined, loft-like spirit that's totally in tune with the times, and makes the plates even more beautiful. Classics are the order of the day, with just the right amount of product and technique to make memories: mozzarella ball with tomato confit, pasta with basil pesto and almonds, sea bass fillet, zucchini au gratin with Italian aioli, beef tartare with chickpea-white bean salad, authentic tiramisù.
