Gourmet Restaurant Founded by the Chartier brothers in 1906, Bouillon Racine is as much a restaurant as it is a historic monument, a sublime testimony to the Belle Époque. The art nouveau décor, featuring wrought steel scrolls, mirrors and curved wood, exceptional earthenware, terrazzo and period features, is a first journey back in time, continued on the plate by the traditions it exhibits, an integral part of the bouillon experience. The recipes are those of a cuisine that is necessarily accessible (otherwise it's not a bouillon), and based on the fashions of the time, well adapted to our times. There's the soup of the day, at €9.75, followed by Dubarry cream with diced truffled ham, pan-fried porcini mushrooms, garlic confit espuma, pumpkin tempura, Basque veal pavé with morel mushrooms and bird's tongue pasta, a royal chocolate entremets, and crème brûlée with maple syrup. The daily special is more than competitive in Paris, at just €19.50. Friendly service.
