Gourmet Restaurant It's a neo-bouchon that takes certain codes and adapts them in a modern bistro style. On the menu, you'll find a few of the standard dishes, such as pâté croûte or poultry quenelle with supreme sauce, but the style is very much up to date: the œuf meurette is cooked at a low temperature, the jarret de cochon confit is with jalapenos and black beans in a light vinegar cream, and the cervelle de canut accompanies a good 10h confit shoulder of pork. Classic or more daring desserts, such as creamy butternut with Corsican clementine coulis and yuzu.
