Florent Ladeyn, the emblematic figure of good eating in Flanders and of the gastronomic revival, is a permanent fixture at the regional feast. With the earth back in its place, it's on the plate that everything happens, with vegetables from market gardeners in their best seasonal condition, and simple, meticulous cooking to keep the bill down at low tide. La farandole is available in the evening for €80, but the €37 lunch experience is a very pleasant way to get to know the restaurant and the staff, who are always cordial, precise and at ease with their comments.
