Chef's Restaurant It's a bistro in name only, not just in terms of its cuisine, but even more so in terms of its decor, with its astonishingly chic and hushed sixties style. At the helm is chef Jean-Christophe Cordel, who has no need to be ashamed of his glowing CV, having worked at Maximin, Savoy and Loiseau, confirming his talents in the creation and execution of such well-traveled dishes as a skate wing terrine with basil and aurora sauce, a creamy risotto with mussels, mushrooms and saffron emulsion, a whole lobster with seasonal vegetables, a grilled Basque blood sausage with hearty jus, a Breton shortbread with lemon and raspberry cream.
