Gourmet Restaurant A Franco-Japanese pairing that deserves its success, dusting off the French register with undeniable creativity and technique. Chef Shimpei Oié has immersed himself in the atmosphere of the Aligre district to extract a personal version of the bistro, drawing on both local produce and typically Japanese minimalism. Plates are available in hidden menus at €29 and €69, with a choice of starter of the day or velouté, fish or braised meat, depending on the market and always accompanied by detailed explanations. Good selection in the cellar.
