Chef's Restaurant Benoît par Alain Ducasse is the promise of an institution under the control of top-flight management. The menu is tempting, pulling you in by the sleeve of tradition, in this secular setting where one is cramped, as in Paris. The whole liturgy could work on the whole with a little more spirit in the service and a little more application on the plate, even if the two toques are maintained for an overall experience that the many visitors appreciate: an excellent ravigote on calf's head, brains and tongue, sauté of sweetbreads (a little rubbery) crests and kidneys of rooster, pasta conchiglie and good truffle juice, coupe chartreuse citrus and pear in simplicity. Cellar representing all regions.
