Chef's Restaurant A most serious proposition on the Saint-Germain side, spearheaded by Amélie Detey and Satoshi Amitsu, formerly of Georges Blanc. The house has no reason to be ashamed of its pretensions, largely supported by the chef's technique and inventiveness, capable of combining French know-how with a Franco-Japanese idea. Mushroom velouté, dried Galician beef, sautéed shiitake and coffee foam, grilled green asparagus, perfect egg, spring vegetables, mimolette crumble and gremolata, quasi de veau, roasted Noirmoutier potatoes, cima di rapa, caramelized Roscoff onion espuma and jus corsé, pistachio soufflé minute, rhubarb ice cream, caramel tuile and pistachio praline. Well-stocked cellar.
