Chef's Restaurant From the Promenade des Anglais to Rue Saint-Dominique, Julia Sedefdjian has gleaned sunshine, creativity and savoir-faire along the way. Her personal, Mediterranean cuisine benefits as much from her experience at Les Fables de la Fontaine as from her elegant reflection on the terroirs she knows. Her table, all natural materials, places the product at the center of the plate, with an aesthetic sense of presentation. To rediscover the sea, a pan-fried cuttlefish, artichoke barigoule cream, compressed radicchio, vegetable juice, crispy egg yolk, whiting and haddock, leeks in seaweed vinaigrette, the famous "bouillabaieta" 2.0 with fennel and rouille condiment, bouillabaisse juice and octopus en persillade, beef cheek ravioli, chou pointu consommé, Niçois condiment and daube juice, hazelnut feuille à feuille, hazelnut cream and ice cream, citrus marmalade with spices.
