A 3* hotel between Troyes and Tonnerre, with modern rooms, swimming pool and local cuisine. The family business has been going strong for a hundred years, and is now run by Monique and Jacky, and their children Christelle, Sophie, Stéphane and Cédric. Cédric, who runs the kitchen with Sébastien and Christophe, defends a small menu of seasonal products, including poultry pressé and foie gras, duck breast and ratafia, pigeon d'Onjon, pine nut crumble and jus court, hot soufflé with 70% dark chocolate and vanilla ice cream. Very fine cheese platter.
