Chef's Restaurant Chefs follow one another like Lyonnais mothers at the helm of the famous bouchon ducassien. Victoria Boller has taken over from Marie-Victorine Manoa, putting her champion CV (Marcon, Henriroux, Martin...) at the service of revisited and urbanized traboules cuisine in the impeccable setting of a chic bouchon near the Bourse. The Japy-style menu gives the impression of authenticity, with quenelle in lobster sauce, saucisson au gamay, poularde de Bresse in parsnip and dandelion sauce, and pork belly in verjuice, all finely departing from the pure repertoire. A cellar of indisputable signatures: Laroche, Girardin, Barret, Villard.
