Chef's Restaurant There is much debate among lovers of traditional cuisine, between those who want to reinvent it, and those who believe in the power of the heritage gesture. For the moment, the Auberge du Poids Public prefers the taste of history, which it practices with academic excellence, and which is appreciated in its rigor and beauty, embodying the genre with mastery. Everything on the menu is admirable, but it's the cassoulet that counts: a cassoulet Saint-Félicien à la mode de Toulouse, applying the recipe and justifying the visit in itself. Very fine cellar.
