Gourmet Restaurant Aurélien Bellocq's generous, well-arranged local cuisine revolves around the region's traditional dishes. From the more rustic, such as pig's trotter with black pudding, to the more classic, such as foie gras with Armagnac, he also takes a simple but effective and gourmet approach to local fishing. A must-try is the sweetbread with soft jurançon and camajo de serrano, fresh mushrooms. A very decent dessert (sablé grand-mère, hint of gingerbread, chocolate praline ganache and caramelized fruit), a somewhat limited regional cellar.
