Chef's Restaurant Romain Gutleben works with talent and dedication in this former winegrower's house. Plates are gaining in finesse, design and presentation, and flavors are clean. His €46 menu (€105.50 with suggested wine pairings) now shows a definite mastery, with foie gras mi-cuit au gewurztraminer VT, quasi de veau mi-cuit en saltimbocca pomme dauphine sauce bordelaise and a very gourmet interpretation of torche aux marrons. A fine, interesting and varied menu, with precise, relaxed service.
