Chef's Restaurant On the way to the Mediterranean, you'd pass through Saulieu, and on the way to the Atlantic, you'd pass through Coulombiers. Of course, this stopover no longer has the frequency of yesteryear, but it maintains an authenticity that we almost regret. We're delighted by the ideas of our son, Mathias Martin, who makes flash mackerel with cucumber, coriander and a cloud of yellow lemon, Apicius duck fillet with confit and smoked beet, pepper and blackcurrant reduction, and cognac millefeuille.
