Chef's Restaurant Chefs rotate fairly quickly at this renowned roadside establishment near the Loire and Sologne, but the traditional French soundtrack is still in vogue in the beautiful, old-fashioned décor under the beams, with thick carpets and curtains, fluted chairs and silverware. Giving Kévin Stroh, a recent arrival who has been trained at the right school, time to settle in, just before he took up his post, we found all the codes in the expected bourgeois line: scallops (only one on the €124 menu, that's a bit small) well prepared with cauliflower endive and a mustard seed fumet, autumnal red mullet, textured squash and millet, fermented tomato water spiked with arabica, the mallard being the best part, very chasse and in true house style, with its well-spiced cocoa sauce, cromesquised leg and blackcurrant. Pleasant Arabica creamy passion dessert. Attentive service, ampouled to the point of excess, but amusing in the second degree. The classic cellar is as remarkable as ever in its great classicism, lining up 700 fine labels, châteaux, estates and clos, at many attractive prices, the fruit of a long-standing collection, proposing, by contrast, a very limited offer by the glass, announced with compunction by the sommelier.
