Chef's Restaurant On the road to the Diosaz gorges at the entrance to the Chamonix valley, a former 18th-century coaching inn has been enjoying a new lease of life since 2023. In this woodsy atmosphere, Hugo Lemercier, a native of the region, took advantage of his years spent working with top chefs such as Mauro Colagreco to return here to Haute-Savoie. A desire to do things right, no doubt, but sometimes a technical demonstration that's not always to the point. We love the snail ravioli from Domaine des Orchis with parsley and black garlic, and are seduced by the tangy notes of apricot, cooked here with veal tartare. We applaud the pastry chef's treasure trove of creamy Joseph Paccard farmhouse abundance, accompanied by a few raspberries and basil, even if this menu, by being hidden and imposed, doesn't quite live up to the spirit of an auberge that offers and makes all lovers of good produce and sincere local addresses salivate. As for the wine list, you'll be able to choose from among the 5,000 bottles and 350 references, and some lovely nuggets, particularly from the indigenous grape varieties. Prices are very reasonable, and service is precise, pleasant and smiling.
