Remarkable Restaurant You can't blame Fanny Rey and Jonathan Wahid for not investing in their home. They are there every day, giving their all to make it grow, and taking care to correct the smallest detail. And that's something we've noticed as time goes by. Less show-off, more empathy, a slightly less condescending service that has gained in naturalness, resulting in a more relaxed and ultimately more chic atmosphere. In the same vein, the chef has reinstalled a short menu (on the theme of truffles the other day, but with optional additions), a much-appreciated mark of consideration, alongside the €200 (six courses) and €290 (eight courses) menus. The staging sometimes takes precedence over the workmanship (the sea urchin with citrus celery tagliatelle), but the workmanship is there and the plate approaches the top tier: very fine scallops with beard juice and truffles (the Sarawak pepper a little overpowering on the butternut) and above all a remarkable turbot, lacquered with its collagen from the bones, where everything is in place, exact cooking precise juice, reduced with grey shrimps, small fennel ragout and pak choï. Jonathan enters the scene for dessert, brilliant and generous in flavor, like the citron and chocolate, pleasant and gourmand, a good job by an attentive pastry chef who knows how to fine-tune so that the result is beyond reproach. The cellar's prices make it clear that, even in Saint-Rémy, the season is short, with a selection highlighting the dedicated winemakers of this early century, with well-established reputations in most regions. Suppliers and artisans are also listed, reflecting our search for local producers.
