Gault&Millau's review 2026

In the heart of Saint-Rémy, this 15th-century inn has been completely restored and transformed into a hotel (with a dozen rooms) and gourmet restaurant. The establishment is run (with big ambitions) by Jonathan Wahid (former French dessert champion when he worked at the Ritz some twenty years ago) and his partner Fanny Rey (former Top Chef finalist some fifteen years ago). She is in charge of the savory side, while he appears during the brilliant desserts and mignardises sequence. Theirs is a very personal universe, a highly inventive cuisine, full of finesse, delicacy and poetry, focusing exclusively (or almost exclusively) on vegetables and iodine. All the dishes bear witness to meticulous attention to detail in the search for the best produce, the cooking, the combinations, the textures, the seasonings, the juices and the presentation, all of which help to mitigate the reticence of uninformed customers, the astronomical prices, the imposed menus and the resolutely affected tone of the service. Some very fine highlights, the "green zebra tomato - a memory of my childhood", the "saint-pierre 51, zucchini flowers" and the "pigeon fumé au foin de la Crau, grilled leeks, salicornes" (the only foray into meat). All of this is perfectly staged, without heaviness, through a series of playlets that follow one another with rhythm and fluidity. The staging is orchestrated by the two chefs and the entire young front-of-house team, who have gained in naturalness and casualness, especially the young sommelier with her sharp choices.
