Chef's Restaurant Loyalty and consistency are the two pillars of this reliable restaurant, which Michel Cudraz and his wife have been maintaining at a high level for a quarter of a century. In the land of good milk, the chef honors tradition, and sets the tone for his dishes, with steamed langoustine and mushroom ravioli, scallops plancha with potato and parsnip mousseline, and farm-raised veal sweetbreads with red wine sauce, mushroom jus and truffle oil. The Gourmet menu at €53 is a good introduction. The wine cellar is varied and fairly wise, with good references from the region, a choice by the glass and organic wines.
