Chef's Restaurant Like many of his colleagues, Ivan Lavaux chose several years ago to work solely on the principle of a hidden menu, which can of course be divided into more or less plates. And it's the chef himself who, more often than not, comes into the dining room to provide service (his first job), highlighting his suppliers (chosen with the greatest care and exclusively in the immediate vicinity) and explaining in minute detail his dishes, which are always highly personal and based on exclusively local sourcing: velouté de courge, et butternut, cloud de pain grillé et jambon de pays, lentils from Ambronay (grown right next door) as in risotto, comté, spring onion and mandarin tagetes, a very fine filet of Ain trout trembling (cooked to perfection) on a maceration of fresh herbs, young spinach shoots and blood sorrel before a gourmet pan-seared back of venison, pata negra bacon, roasted figs, porcini mushrooms and oyster mushrooms. A lovely dessert of hay, spices and coffee. The elegant dining room, renovated in 2022, is arranged in alcoves, allowing each table to retain appreciable intimacy, and the cellar, immense and built with passion, follows the same precept as the kitchen, focusing on wines from the region and highlighting the younger generation.
