Gault&Millau's review 2026

A veritable institution on the outskirts of Avignon, the Auberge de Cassagne is a magnificent 5* hotel-spa, celebrating Provence in a setting of luxury and calm. To honor the place, the gastronomic menu benefits from the talents of Philippe Boucher and Anthony Iorio, both of whom have worked in some of the world's finest establishments, and each of whom brings an intergenerational vision of the terroir. The menu features a number of classic dishes: smoked king prawns with butternut, yellow lemon and confit; pan-fried cod on a bread crust with celery, leek and peanut trilogy; venison marinated in herbs and olive oil, sauté roasted with thorn vinette sauce. We finish with Maud Poli's desserts, such as Valrhona cocoa pod and coconut, or corn and pecan burst. Impeccable service.
