Chef's Restaurant Alain Dutournier is always on hand to greet his long-standing customers in the house where he grew up. With his accomplice Laurent Bouveret, assisted by chef Julien Chanson, they offer a rich, gourmet cuisine, nostalgic for his youth in the Landes region. Oysters in roasted eel crepinette, seaweed matelote juice, "magic" leaf; skrei back in green asparagus Viennoise, light asparagus brandade; melt-in-the-mouth free-range poultry, sweetbreads, foie gras, celery truffle-subric and stuffed cabbage, finishing with a sparkling granité of white armagnac and citron, and for those with a sweet tooth, the fine croustade landaise, warm and crisp. This generous cuisine is complemented by wines from all regions, ranging from the great to the more affordable.
