In a small village above Bourgoin-Jallieu, chef François-Xavier Bouvet runs one of the most popular addresses in the area, for his graphic and inventive local dishes. The place is rather discreet, but connoisseurs know they're in good hands. The menu, which evolves often and well, will offer, for example, yellow and grey oyster mushrooms with polenta, agastache and zucchini, Arctic char with a velvety tomato, carrot and ginger sauce, mung beans, cooked lamb confit with bell pepper, zucchini, eggplant and jus court risotto, or a regressive hot chocolate soufflé.
