Gault&Millau's review 2026

A classic, not to say a legend, of the halles and their history. Of course, the setting, the environment and the establishment itself have all evolved to suit the 21st century. No more early-morning "chevillards" sharing a salty lentil bun, but tourists all day long seizing a corner of authenticity with oysters, seafood, charcuterie, mashed sausage, onion soup, snails, andouillette Duval, and of course the famous pig's trotter béarnaise and French fries.
