In the kitchen, François Golla, following in his father's footsteps, brings to life a generous cuisine firmly rooted in its terroir, though he doesn't hesitate to make a few forays to the coast, for the pleasure of good food and no holds barred. The hotel-restaurant draws as much on tradition as on new fashions, for a menu that's always renewed, where you'll discover large, crispy langoustine with vermicelli, cut with lemon and tomato sorbet, Sparsbach trout tartare, crusted with almonds and gently candied, with mousseron and fresh almonds, the unmissable pigeon from Kieffer's, breast in boletus Viennese, legs in herb pastilla, wings in fleischnakas, abattis and roots, and finally the dessert of Alsace cherry and Valrhona chocolate.
