Chef's Restaurant Just opposite Notre-Dame de Paris cathedral, the 15th-century building redecorated by Wilmotte extends the journey back in time, with this room that has either a seigniorial or pop art air. Imposing carved stone fireplaces and ashlar walls on one side, contemporary paintings and monochrome black on the other, combine to create a rotisserie that is as much an old inn as a neo-bistro. Guy Savoy and Emmanuel Monsallier's project combines art and technique, to offer local cuisine: poultry liver salad, saddle of rabbit and green asparagus, spelt and mushroom risotto, spit-roasted meats (Maine farmhouse poultry, duck breast, fillet of saddle of lamb), vanilla crème brûlée. A fine selection in the cellar.
