Remarkable Restaurant Happy Blésois, who now have so many opportunities to enjoy fine meals in diverse and remarkable settings. The majestic river descends towards the ocean, inspiring Anthony Maubert to reflect, to stage, even to create, with his wife Fumiko, in this uncluttered and inevitably zen-like house on the outskirts of town. The playful spirit reigns, a little too much at times, in the vein of the litany of surprises that so many restaurateurs inflict on us these days, thinking they're doing the right thing for the quality of the "experience". This is the only criticism we have of this perfectly-tuned gourmet experience: excellent ideas, but too little information before and far too much during (even our most astute investigators have trouble keeping up...). But, fortunately, the pleasure of the plate is there, served by a remarkable wait staff. A host of bite-sized treats (some 15 in all throughout the meal) are impossible to resist, including foie gras and kabosha squash, monkfish under a cloche to preserve the aroma, carrot and fennel, goat's milk and chestnut, and a gentle, subtle preparation by Fumiko before the fig, farm milk and tagette dessert. Flavors, textures, harmony: everything is a success in this well-ordered parade. A fine wine cellar with a predominantly Loire flavour, unpublished wine by the glass. The restaurant, which will undergo a long and extensive renovation campaign, will move to the Novotel in Blois in April 2024, before returning to the banks of the Loire.
