Remarkable Restaurant Based on our most recent experience, it was only to be expected that this house and its chef would rise sharply in this edition. Now that Clément Dumont has come of age, it's time to shine the spotlight on a cuisine that puts produce and nature at the center of the plate. In this typically Touraine building, the chef's wife Océane knows how to put the customer at ease and the table at its best, with a young, highly professional team in a carefully chosen setting where every element counts (crockery from an Anjou potter, knives in a variety of woods created by a Chinon workshop). The course is that of a grand house, with a modern-day ritual and top-flight dishes: creamy scallops with coral heliantis, spinach and walnuts, watercress coulis, a starter with character, vegetal sausage, autumnal chips, salad and ketchup, broccoli with warmed trout and quinoa with iodized squid ink emulsion, Rossini-style venison, roasted potato leaf, chestnuts, Brussels sprouts, meat jus... Everything points to the third toque, right down to the Kayambe 72% dark chocolate and hazelnut, frosted heart with wild herbs and sabayon. A fine wine list, with the region's top wines and a few fine discoveries highlighted by the talented new sommelier, Jeanne.
