Gault&Millau's review 2026

It's a complete success for Anthony Bisquerra, both in terms of concept and customer satisfaction. In a tourist bistro format (right in the middle of rue Sainte-Claire, tables close together, conviviality and good manners), he plays an honestly calibrated score in his two four- or six-course menus, reinforced by two elaborate appetizers and mignardises. While the starter ("Préambule") gives free rein to the improvisation of the moment (strips of trout cooked in salt, bergamot leek with sour cream), the dishes are well-constructed and technically accomplished, reminding us that the chef was worth three toques in his Alpaga megévan. The pollack in a declination of fennel, with a precise, well-spiced sauce, shellfish and meadowsweet, as well as the guinea fowl supreme with spinach and poultry jus, mondeuse caraway with a small gratin of chard and abundance as accompaniments, testify to this mastery, as does the vegetarian proposal, celery hazelnut sorrel risotto with bouddah hand, gourmet and balanced. As a speciality evoking the chef's Basque country, the light, frothy chocolate, piquillo and Chinata pepper sorbet makes a dessert of good connivance. A good, trendy wine list that displays regional charms with a wide variety of hexagonal wines, and wines by the glass at €10, young, attentive service, with a radiant Lucie at ease with everyone.
