Having worked alongside the likes of Ghislaine Arabian and Alain Senderens, Olivier Polla has the experience of fine dining, and serves this elegant address in the historic center. The chef imagines a convincing gastronomic cuisine, evolving with the seasons, proposing a starter of white and green asparagus, one glazed with cider and the other grilled and sorbeted, bear's garlic and apple vinegar condiment, a filet of St. Pierre, orange caramel and beet, orange, saffron and pistachio sauce, beet gnocchi lacquered with poultry jus, or roast rack of lamb, shoulder confit with Kalamata olives and lemon confit, carrots with caraway and chickpeas, spicy jus. Good service.
