Remarkable Restaurant Here's a table that makes you want to come and share the wonderful complicity between chef Toshitaka Omiya, who has worked with Robuchon, Passard and Legendre, and his restaurant manager and sommelier Shawn Joyeux. Shawn's welcome is prompt and warm, and he's also inexhaustible when it comes to his wine list. In the kitchen, you'll be guided by Toshitaka's preparations of the day. His products are superb, his plates elegant and refined, and his cooking meticulous. His six-course "Résonance" menu is a masterful balance of flavors and textures. After a multitude of appetizers, including fresh peas and strawberries, the meal begins with marinated bonito steak and cauliflower cream, raw and cooked artichoke hidden under a sabayon of fresh coriander, a dish of great finesse, and saint-pierre enlivened by green celery, celery and salicornia, a small piece of warm croissant and caviar is interspersed before poached foie gras, turnip ball and duck consommé, and a splendid pigeon in different textures, pink supreme, leg in stuffed cabbage and grilled giblets. Fresh cucumber and green chili precede a pressé of strawberries-blette-granny-smith, almond milk ice cream and wild strawberry salad. Attentive staff, extensive wine list and fair prices.
