Gourmet Restaurant Between the cathedral and the Palais des Congrès, this street is certainly not the most picturesque in town. However, behind a discreet facade, you'll now find a new table, primarily navy and full of spirit. Completely refurbished in white and very light grey tones (with green curtains to match the armchairs and towels), the room, which is longer than it is wide, offers three very pleasant spaces. The walls are adorned with paintings by the chef, demonstrating that Guillaume Le Bozec's world is not limited to the kitchen. Having worked with Laurent Saudeau (Manoir de la Boulaie) and Le Pressoir in Saint-Avé, he learned the fundamentals of seafaring cuisine, the combinations that make sense and the precision of seasonings that make dishes dance. In a relaxed atmosphere, you'll appreciate not only Delphine Dugor's kindness and the quality of her service, but also, of course, compositions that are as aesthetic as they are tasty: small slices of flame-cooked mackerel resting on a creamy avocado cream combined with a "fumet de poisson, coco, coriandre" alliance for pep; a nice thick slice of chilled watermelon topped with an airy burrata emulsion scented with lemon verbena, accompanied by a few bouchot mussels... Freshness guaranteed! The pollack and saffron bird's tongues basted in a bourride-style broth and the chocolate and raspberry dessert complete a very pleasant meal. Small cellar in harmony: châteauneuf-du-pape from domaine Usseglio, dry jurançon from Charles Hours, menetou from domaine de Coquin, sancerre from Éric Louis... So many reasons to become agora...phile!
