Chef's Restaurant Martin Maumet, who spent eight years with William Ledeuil, is now at home, without having moved. He bought the establishment from his mentor to live his own life, renaming the premises to open his first restaurant. And it's already a success: because the faithful have continued to come, because others have arrived out of curiosity, to find that the young chef has kept all his knowledge, the quality of the products, a form of simplicity on plates with a spirit of probity and seasonality. A short menu and meticulous work on the three small appetizer plates (special mention for the well-spiced tartare), the skate (not the fish itself, a little soft on the knees, but a tasty accompaniment with the eel and yuzu juice), a fine winter delicacy, piglet with chestnut mushroom gnocchi and olive condiment, and a pretty quince apple dessert once again qualify Chef Martin's first restaurant for 2 toques. The cellar is already well-stocked, offering original choices from all regions, and the young, professional, Parisian service is well organized and well advised.
