Jérôme Gangneux's menu, which he's been cooking up for twenty years, includes most of the latest trends for a clientele that expects cuisine that's both trendy and traditional: raw tuna in sesame tataki, risotto with white truffle aromas, octopus plancha "back from Cambodia", veal chop in turmeric breadcrumbs, hazelnuts and grilled Parmesan cheese.
