Yoan POLYDAMAS
"I didn't know what I wanted to do," explains Yoan Polydamas. However, when he entered the Lycée Hyacinthe-Friant in Poligny (Jura), he quickly adapted.
The young man discovered the restaurant business through various internships. While he started out in the kitchen at La Belle Époque, in Pouilley-Français (Doubs), he was more at home in the dining room, at the gastronomic restaurant Le Jardin des Remparts, in Beaune (Côte-d'Or), which became Garum in 2021.
After landing his first job as a waiter in 2020, at Restaurant Prélude, in Saint-Vit (Doubs), Yoan Polydamas became head waiter in 2022. That same year, at just 22, he was awarded the Jeune Talent Service en Salle Bourgogne-Franche-Comté trophy. In 2023, he joined the brigade at L'Auberge du Pont de Collonges, Paul Bocuse, as demi-chef de rang.
Today, the young chef de rang dreams of adventure and travel."I need to see something else before I fully immerse myself in this field."A passionate sommelier, he hopes one day to open his own establishment,"a revisited wine bar, with wine-based cocktails".
